SUMMER SALMON & SALAD

Ingredients:

For the Salmon Skewers:

  • Fresh salmon, cut into cubes

  • Red onion, cut into chunks

  • Capsicum , cut into chunks

For the Fresh Garden Salad:

  • Mixed green leaves

  • Diced shallot

  • Fresh mozzarella, torn into bite-sized pieces

  • Cucumber, sliced

  • Lemon thyme, chopped

  • Parsley, chopped

  • Baby capsicums, halved

  • Cos lettuce, torn into pieces

  • Strawberries, sliced

For the Marinade:

  • Olive oil

  • Lemon juice

  • Garlic, minced

  • Salt and pepper to taste

Instructions:

1. Prepare the Salmon Skewers: a. In a bowl, mix the olive oil, lemon juice, minced garlic, salt, and pepper to create the marinade.

b. Thread the salmon cubes, red onion chunks, and capsicum onto skewers.

c. Brush the skewers with the marinade, ensuring they are well-coated.

d. Preheat the grill to medium-high heat and cook the skewers for 3-4 minutes on each side or until the salmon is cooked through and has a beautiful char.


2. Assemble the Fresh Garden Salad: a. In a large bowl, combine the mixed green leaves, diced shallot, fresh mozzarella, cucumber slices, lemon thyme, parsley, baby capsicums, cos lettuce, and strawberries.

b. Toss the salad gently to mix the ingredients evenly.


3. Serve and Enjoy: a. Plate 2 cups of the Fresh Garden Salad.

b. Arrange 1-2 Salmon Skewers on the side.

c. Drizzle any remaining marinade over the skewers and salad for extra flavour.
